Southern Food in Nashville - Meat and three

Nashville and food is a tricky situation. We are known for fried chicken and most things fried but we are also known for meat and three's. We don't have a certain thing that we are known for when it comes to food but we are slowly building an amazing network and family of restaurants, candy shops, chocolatiers and locally grown foods.

What is a meat and three? It is where you go and pick some meat from a selection of anywhere from 3 to 6 choices and then 2 or 3 choices of vegetables on the side. For the vegetarians there is always the option of getting a plate of 3 or 4 vegetables. Each dish comes with either biscuits or cornbread and the desserts are most always delicious and homemade.

The desserts are often something along the lines of banana pudding, apple or peach cobbler, pie or cake. Always some variety with some places having more choices then others. When it comes to the pies you usually have some pecan, apple, chess, sweet potato, chocolate, coconut and sometimes even more options. Cakes are usually a yellow cake with chocolate icing, coconut and some others.

When it comes to drinks most folks go with sweet iced tea but you usually also have the options of lemonade, coffee, sodas and not much more then that.

Business hours are usually lunch time which usually means 11am-2 or 3pm. Some places are open for dinner but it is always best to check before assuming because most of the meat and threes are family owned and they want to get home to be with their family as much as possible.

Customer service and hospitality

When you go into a hotel or any type of business and you hear about customer service and hospitality, does it ever feel fake? The words ring hollow to often because they say them as long as you can bring money to them and it is a one way street. Once you need them to extend a favor or the hospitality back your way they just don't seem to care about you like they did before.

I've heard many frequent flyers and hotel chain members who complain about being one night or flight short of reaching the top level of membership and when they ask for the night to be given to them, they are told no. Yet when these companies need the business of the travelers, like now or after 9/11 they said and did all the right things to get people to come back and stay or fly with them. Soon after business was back to normal, they eased back and starting changing they way they handled frequent travelers needs.

Now I understand that businesses are in business to make money and I'm all for that but please don't be fake and pretend like you care so much about the customer. Yes, I've been in the hospitality industry for most of 20 years and most people that I've worked for truly care to keep the guest happy and it can be discouraging when you are told to do things a certain way and then at some point in begins to change and it is solely to save money.

Getting out and communicating with the public through Twitter, blogs, emails, newsletters and the like are great but people can see when you truly care and when you are just looking to get their money. They don't want to be nickeled and dimed to death but would be willing to pay a decent price to have everything included.

I would love to see the best of both worlds come together. The modern convenience and technology mixed with the old-school way of caring for the person right in front of you and not just seeing them as a dollar sign or a number.

As the economy changes and people reevaluate how they do business and whether or not they even have to travel will begin to see many businesses change how they treat the public. If not, they may not make it long term.

Southwest Airlines is a great example of that. They do things that make flying with them a joy. The other airlines don't and then they complain about the things that Southwest Airlines does. Change or close up shop may be the answer.

I just want the companies and businesses to do what they say and be genuine. Don't be shy about making money but don't try to rip everyone off in the process or be two-faced about it.

90 minutes at Robert's Western World

Went down to Robert's Western World last night for a little while and sat a couple of stools down from Rhonda Vincent. Wow, she is a beautiful lady and she is sooo talented. I had some Michelob Ultras and I received a free sandwich from the bartender because some guy didn't wait for his order so I received a ham sandwich with fries. Okay, it wasn't gourmet or fine dining but for a lil honky-tonk food, it was good and helped keep the beer in check.

Great times as the crowds flooded in from the CMA Awards at the Sommet Center. Talked just a itty bitty bit with Rhonda, Manuel came in and the Travis Mann Band absoutely tore the place apart. They all are so much fun and the new guitarist really fit right in to their fine grooviphonics. Dig the rockabilly!

I love Nashville and I think this is the kind of thing that truly only happens here in Nashville. Oh, oh yeah...the irony is that I don't think anyone recognized Rhonda Vincent. She sat at the bar with a couple of folks, ate a cheeseburger and enjoyed the music. I think the only time someone besides me talked to her, was to tell her they wanted a drink and to help get the bartender.
